I think it's in the LH door mirror not the driver's side but don't take my word for it. It is on the C5s

There are no colours specified - PSA sometimes did not specify colours for their wiring - you'll have to match up the connector wiring against your old one when you replace it. Even the Wiring diagrams are non-specific - but I'll need your VIN in order check against your model as there are several different ones depending on electrical architecture of your 807.
The temperature is on the left hand side (passenger) mirror on some and right hand side on other vehicles. On the 807 it is shown as being on the right hand mirror.

While the PSA group do not have a fixed colour scheme they usually print a code on each wire, which could help (unless it has faded, of course).

You really don't need a wiring diagram for this, there's a wire from the mirror into the door and it's plugged into a connector half way down behind the door card.
The simple fix is to snip it off at the mirror end and solder the new sensor on without the need to take the door card off.

Ok, it's a pretty easy job to do, but make sure you have some plastic trim removal tools similar to the ones below. You'll also need some heat shrink for the wiring once cut and spliced to repair the connection.
Removing
Trim Removal Tools | (1) Ambient temperature sensor on the right-hand exterior rear view mirror. Disconnect the battery. |
Remove the glass (2) of the right-hand exterior rear view mirror. Angle the glass (1) of the exterior mirror (2) (following the arrows "a", "b", "c", "d") to detach the glass (1) from the exterior mirror (2) ( as "e") using trim tools. | Disconnect the exterior mirror deicing harness (2) on the glass (1) ( as "f"), using trim tools. |
Detach the shell of the rear view mirror (3) (at "a") using trim tools. Tilt the mirror (In the direction of the arrow "b"). Remove the rear trim (3). | CAUTION: Detach the exterior temperature sensor (1) using trim tools (Against the frame (4) and the plate at "c". |
Detach the harness of the sensor (1) from the frame (4). Cut the wires of the exterior temperature sensor (1) (at "d"). Note: "d" = 30 mm minimum from the sensor. Remove the external temperature sensor (1). Refitting Restore the electrical connection of the outside temperature sensor (1) (at "d") using heat shrink sleeves. Position the exterior temperature sensor (1) in its housing. Refit:
| Reconnect the exterior mirror deicing harness (2) on the glass (1) ( as "f"). Note: At the same time clip the glass (1) on the motor (3) of the exterior mirror (2) ( as "e"). |
