Touchscreen doesn't load and AC turns on at max heat. Peugeot 5008 1.5 Diesel from 2018

When the engine is turned on the touchscreen head unit stays on Peugeot logo and doesn't load any further.
At the same time AC turns on at MAX heat with no way to turn it off since it's done only via the touchscreen.

The car drives fine as usual, no errors/warnings, some info(like navigation) is missing on the screen behind the steering wheel most likely because the main computer didn't start up properly.

Official Peugeot service was unable to resolve the issue.
According to them the diagnostic was fine and the software updates didn't help.
They recommended to replace the computer but were unable to source it themselves since that part is discontinued. (the car is just 6 years old!)
And they didn't recommend to buy a second-hand unit since it's hard to get re-programmed according to them.
They said it's better to buy some new unit which is compatible with the existing one. (?!)

What are the options? How and where it can be fixed around London.
If I find a second-hand computer unit for 3008 for the same year will it work in my 5008?
Is it possible to install 10'' touchscreen present in the later models?

The dealer is correct in that the Head Unit (behind the dashboard) is configured at factory for your vehicle's specific equipment and options. They can usually provide you with a new unit or one that has a replacement unit. If you post your VIN I can check to see this.

Getting a second-hand used head unit may not help if it is not from the exact year with the exact same optional extras and standard equipment as your own vehicle, plus it will need VIN coding by the dealer or you won't get updates to navigation or firmware etc. Equipment may not work if it is not configured to your vehicle basically.

It's 5008 from 2018, 1.5L BlueHDi GT Line Premium

The problem is that Stellantis says that part is discontinued so they cannot order and provide a new one.
So I'm trying to find out what I can do, what unit I can find/purchase which will be fully compatible with the car
Should I try finding the second-hand part from the exact same model and spec in ebay/car breakers or I can use the one from 3008 for instance?
At this moment I'm not sure what to do next.
The car drives fine and everything works. Even the reverse camera works fine and shows the image on the screen.
It's just unbearable to drive it with AC turned on all the time at max

Well all I can tell you is that there is nothing stated on parts to say the head unit is no longer available (which it normally does when they are no longer available). It has been replaced with a later part number though.

All I can suggest is you contact another dealer, but in the interim, try the BSI reset:

Stellantis says I need NAC unit replaced which they don't have available and they have to order from Peugeot to be build and programmed for my particular car and there is no guarantee it will be done.

The issue has been resolved by purchasing a second-hand NAC unit from 3008 and reprogramming it for my car
