We bought a 1973 Citroen DS, that at first seemed in pretty good nick.
In hindsight thought, the car wasn't really maintained as it should've been and had its fair share of problems, especially around its hydraulic system. We recently performed quite a lot on the car including replacing the rear suspension arm boots, and rebuilding the hydraulic pump.
And that is the point where the problem started. Before, the car struggled to build pressure due to the leaks but could hold it quite well once it did. Now, it also struggles and bubbles are appearing in the tank, and the car loosing pressure after some driving.
Note that no matter how long I sit and bleed the system, by leaving the pressure relief screw open (no more than half a turn), it seems like the bubbles are not subsiding, but rather are being amplified.
Any suggestions to why is that? If you need any more information, let me know

Then you must have a leak I suspect somewhere in the piping or the pump itself that is drawing air in. Sounds like the accumulator is not holding pressure.

Air can only enter the system in the plumbing between the reservoir and the pump.
The usual culprit is the hose from the reservoir especially at the ends. Rarely it is the pump or the pickup tube in the reservoir.
