My car failed its mot as the handbrake wasn't up to a satisfactory standard but when doing a little investigation its quite hard to find any information on how to adjust the electric handbrake, ive even purchased a workshop manual and it has no information of how to adjust. Does anyone have any idea?

Not really, unless it's the actual brake cables, which can be replaced.
There's a main cable from the electronic handbrake unit and this connects to 2 separate cables left and right that act on the rear calipers. These can wear so are replaceable.

when checking under car i could see where the 3 joined. Found it strange why at that part there wouldn't be an adjustment, Would it likely be just on those to back cables that the wear rather than the one that goes to the unit?

It depends on exactly why they failed it. Sometimes they can tell you which side is weaker than the other - or they may just say that the handbrake is not effective.
Of course it's important that they know how to test it properly but they should be aware that the EPB switch has to be held on by hand to apply maximum stopping force. If it's more on one side that the other, then it may be the cable on that side or the caliper may be seizing of course.
