I can connect my iPhone to my C4 Picasso via USB. When I do so, I wish to listen to Audio Books on Amazon Audible. If I play the file on my phone, it comes out the car speakers and the dash display tells me about book name, track info, position, etc.
Is it possible to pause / play using the car's equipment, or can this only be done from my phone? I can fast-forward, rewind, select different tracks from the car's screen. It seems odd that it's not obvious how to pause / play.
Any ideas, please?

What you can and can't do will depend on the installed Head Unit. Pop your VIN up (please post your VIN in full without spaces - it will be automatically masked from public view after submitting your post & will only be visible to staff), so I can determine what system you have and provide a more relevant answer.
