Temperature Sensor Jumper 2.5d

Hello. We have a Citroen Jumper, 1999, 2.5d

We are doing an engine swap and we want to check that the cooling fans get activated.

Does the blue sensor above the thermostat housing control the temp gauge and fire up the fans ?

Of course, silly us.

It's that great big sensor at the bottom of the rad, with the 3 wires to it.

As we have a spare rad and sensor, suppose we could remove the sensor from the spare rad, connect the wires to it and pop it into a mug of boiling water ---- that should fire the fans without risking cooking our engine ???
