When the Xantia should be parked for a long term is it better to leave the height lever at low position ?

It makes little difference, so far as the hydraulics are concerned, as the car will sink to lowest if left for a long time.
For long-term parking/storage (many months), I would advise
- Don't park on wet or grassy ground (risk of underside rusting, including the hydraulic pipework)
- Lift the wheels/tyres off the ground, to avoid tyres getting 'flats', and to allow air-flow under the car. Support on secure wooden blocks placed under the subframes, not the sills.
