GTI Turbo jerky throttle

Ok. So I am now running a std coil/ lead /plug set up, it's done enough miles to get good clean fuel through, has new fuel filter, good air filter, etc..
The car is now definitely better, smoother than before, but still the sticky, jerky throttle from closed/ low revs/openings...
There IS play in the mechanism under the plenum, but nothing is sticky/stiff, just loose and wobbly
Has anyone got any bright ideas?
Air flow flap?
Injectors?
The symptoms can be fairly extreme in that it's sometimes impossible to just crack the throttle gently when in gear without a big jerk
If you're using the clutch, it's fine as you can ballance it against the throttle, like a motorbike, but obviously I don't want to do this as it's a CX clutch!! :shock:

I should add I have NO idea where it is on air flow via the 5mm grub screws, ie, I can turn it a lot and it doesn't make much difference

Sounds a lot like the drivability issues that affect our Escort, low speed fuelling all over the show & air bleed makes little to no difference etc. I'd suggest a gas analyser would be a good start but before that the basics, compression/leakdown test & checking the injectors are functioning correctly. If you can get a rebuild kit for them it might help. Once you know the basic engine is healthy and injectors spraying cleanly then a gas analyser/crypton tuner etc plus someone who knows how to interpret the results would most likely give the answer :)
