Pug 306 Overheating - Advice sought please

Hi Folks,
My 306 Meridian overheated yesterday in traffic and the red "STOP" light came on. Damn!
The temperature gauge was showing much higher than usual (95+).
First thing, I checked the oil which looks nice and clear and at the right level, so hopefully the engine has not completely blown up just yet.
Driving at speed it seems quite normal, so I imagine that the radiator thermostat is working OK, but perhaps the fan(s) are not coming on when they should?
I knew that the cooling fans usually behaved differently with the Air Con "ON" (more proportional control, it seems) so I tried switching that ON. In traffic - Problem goes! Both fans run.
If I switch off the Air con, the fans continue to run for a while, then stop and the engine heats up again.
I suspect maybe a sensor problem - bit not sure where to look.
I'd really like to know more about how the cooling system functions on these models.
Any advice very gratefully received....
