Right, now I'm not sure if this is simply down to being French, a little Quirk, or faulty wiring.
The car had a new heater unit installed a number of years before my ownership, I have the receipt somewhere for it too.
Basically, when the heater is set to vent on to the front windscreen, at any temperature and/or fan speed, the Stop warning light flashes, along with the engine temperature indicator.
Move the slider slightly off the windscreen icon, and the flashing stops.
I don't think it's anything to be concerned of, but always good to ask...

Re: Odd Heater / Stop Warning Activity
I would check the cooling fans are working. In the windscreen demist position the air con is turned on (and no, the light in the switch does not turn on), as the action of the air con dries out the air passing through it.

Yep. second that - the fans are not working. The ECU picks this up when you put the AC on (by selecting demist), and flashes the overtemp light. You will either find that one or both of the fans is wrecked, or the relays are corroded or burnt.

Excellent, that gives me something to look at this weekend.
Quite interesting how the AirCon comes on when the demist position is selected, must be the first car I've owned that does.

Well, as the air is drawn over the A/C gear to dries out the air, which helps de-mist the windscreen much more quickly.
