It sounds like the Bitron is playing up as both the stop and overheat lights are coming on, but the temperature is low.
The brown plug goes all the way to the Bitron which is tucked away somewhere under the right hand headlight as you face the car. When you disconnect the brown plug, the Bitron loses the temperature signal and so as a safety measure puts the fans on full speed.
Through corrosion and old age of the plug at the Bitron end, the Bitron gets false readings or none at all and so flashes the warning light and speeds the fans up.
If you have time to remove the headlight and perhaps even the front bumper (I'm not sure exactly where the Bitron is) then you can disconnect it and check the contacts on the plug and clean them up if not too bad.
Or just live with it.
