Check that the brakes are not binging and the handbrake levers on the front calipers are not sticking. Its far from unknown and on a long journey is where you will notice it. So spin all 4 wheels and make sure they are free running.
Obvioulsly check tyres, condition and pressure. If its a long motorway run and even more so if their is weight in the car, go for the higher loaded pressures.

I was about to say tyres and their pressures! How about making sure you have the kit you need to swap to the spare if you get a puncture a long way from home rather than rely on the AA man!? Not just a decent spare or jack but a decent wheel brace. For my sins I had to get a trailer and tow car Relayed home as the fancy after market alloy wheel bolts were too short to secure the spare steel wheel even though I had my full toolkit and 3.5 tonne trolley jack on the boot!
Then there's decent wipers that don't judder and concentrate screen wash as you're relying a whole lot more on good visibility for anticipating the road ahead whilst at high motorway speeds and knowing our ropey summer weather: last thing you need is a smeary fly splattered screen and distractions from duff wipers!
Then there's a decent scale hard copy atlas in the seat pocket as all crapnav jobbies are only good for leading you around the houses to see the bleedin steeple!

Re: Apart from Oil, filters and levels what else?
Weekly and before any long journey I always check all fluid levels and have a good look around and underneath for anything loose, leaks, the integrity of the driveshaft boots and exhaust and generally for anything that looks not quite right.
I look at all four brake discs to ensure they're all nice and shiny. 'Bluing' of a disc surface can indicate binding - the colouration coming from the heat generated. When stopping during a long trip I'll also feel the wheels in turn making sure they're reasonably cool..
Tyres - goes without saying really. Condition and pressure.

I think he meant binding.

So oil change. I provided. Fuel, Air, oil and pollen filters with a once over £106. Not unhappy.
