Looks like I will have to change the temp sensor in the Picasso - assume it can be whipped out, finger over the hole, stuff the new one in, with minimal loss of coolant?

That's what I'd do. Probably won't have to bleed it as the pressure will force water out not air in but finger over hole (cold engine!) would suffice.
Only 'difficult' bit will be swapping seal over with one hand if new sensor is devoid of a seal.

Have the new sensor & seal ready with a smear of grease on it, sometimes the the old seal will come out with the sensor & sometimes it stays in the hole, if the seal stays in the hole & assuming there were no previous sings of leakage i re use the old one for quickness & to loose minimal coolant. remember to remove & refit the coolant cap to release any built up pressure first.
