Do you or don't you water plants in this extreme heat? Is it morning/evening only?

Depends on how much they've collapsed and what they are, but preference is for early or late in the day.

The dahlias will get a good drink just before dusk and a top up at 5 in the morning, but I'm not sure what has actually happened to our tree as I haven't been out to investigate yet!! Staying very cool indoors under the fan to avoid the issues I get in even milder heat than this. I'll post up the tree's fate later!! :-D

It's not that unusual for trees to slough off branches in times of stress - such as high heat temperatures. Always worth investigating to make sure there aren't any underying issues with the tree though - such as disease or damage.

Bloke been round marking a lot of trees here that are showing signs if disease.

I water my garden(s) usually every night and sometimes in the morning too.
I noticed this morning all the morning glory vines looking very unhappy.
I just tried to go out into the garden and couldn't open the doors, they had expanded that much with the heat.
Was going to go out the front and come in the back gate and hose them down.
But that would mean more window cleaning (glass doors) so bugger that.
Went for a cold shower before going for my car. The shampoo was as warm as tea.
Just been for another cold shower, that is four today. Roasting again.
