I don't accept that it's OK for x number of people to expose themselves to potential harm by partaking of 'dangerous' sports or pastimes, whereas it's not OK for x number of people to expose themselves to potential harm by what they eat.
Either it's OK to expose yourself to potential harm, or it's not. It's not a numbers game.
Educating people about the potential harm is a different matter, however.

I have to agree there Bobins. Education is essential to ensure people are aware of risks in whatever field you are looking at, but the decision as to whether to partake or not must be left to the individual in my view. Establishing and maintaining a safe environment in which to live and work is one thing but inhibiting an individual from making a free choice within the society's laws is just not on!!

When I were a lad most people had common sense - didn't know about asbestos of course.

Was it common sense - or education, in the broadest sense?

Most people can work out that confectionery, biscuits, cakes & carbonated drinks contain sugar & moderate their intake accordingly - but what about the things that you wouldn't expect to contain sugar, for which there is no need nor, so far as I know, do they meet the criteria to attract the additional tax.

You'd think that wouldn't you? Not in the real world. For example at Halloween the Missus made up little packages for the trick or treat kids, just a sandwich bag with crisps, a bar some nuts some sweets etc she did 48. Kids were coming to the door with Lidl shopping bags, the bigger stronger ones full of confectionery. That's greed and bad parenting rolled into one. Our grand-kids had a felt bucket about the size of a sand bucket for the beach for their trick or treat.
I know you can't stop people doing things harmful to themselves, for example people take their lives all the time but imagine the outcry if they saw ads for the acme offyourself kit every 12 minutes. Same principle you can't stop them but don't encourage them.
