Quite right too Jim, just make sure it's a good chippy with quality stuff. We're lucky enough to have two very good ones in the village. Or unlucky enough. Monthly treat.

I rarely eat fish from anywhere nowadays. If I do it is going to be haddock, lemon sole, or halibut, and it's going to be bought out of one of two local fishmerchants who buy off the boats and process it themselves. I suppose I was spoiled as I was a fisherman for many years, ending up as owner/skipper of my own boat. This made me spoilt and only ate the freshest and best quality fish. If I was to tell you some of the things that happened to your "fresh" fish it would open your eyes in a bad way, so I won't. I suppose any "fresh" food industry could do the same. And it's 12 years now since I was last on a fishing boat and things have moved on now regarding hygiene etc.

I'm not really bothered Davie, as any fish I eat has been sat in boiling oil for about 9 minutes, so that'll have killed off any nasties

Both places I ate in South America , I saw the fish and prawns coming out of the sea!

Like I said things have moved on. And they had to be processed and washed quite a few times before Mr chippy got his hands on them. It's more the length of time between catching and eating that matters. As a basic rule of thumb if fish smell like fish they are off or nearly off. Fresh fish fillets have very little smell.

Generally, with exceptions like the CXM Mobile chippie at little Horwood, the chippies around here are rubbish and I put that down to being too far distant from the source of the fish..

I find generally that chippies by the sea seem to do the best fish...

It's quite strange in that fish and chips is a very simple meal ingredients and prep wise yet it can vary so much in quality. My mate who has a few chippys in NZ says it's all down the how often the oil is changed.

This could be very true. Adriana cooks empanadas (not often, sadly) - like small pasties, but deep fried and the shell is made of maize flour, milk and water. Very nice, but she insists on using fresh oil every time otherwise they "don't taste right".

I would think also due to the quality of the oil. I knew a chippy who used 4 fryers, one for chips only, one for fish, one for meats etc and one for everything else. It was the best chippy for miles until he retired and a new owner burnt it out. It's now rebuilt but is a Chinese takeaway.

Absolutely agree. The oils that tend to be used are the "toughest" or most durable, not those which add niceness to the food.

Not good for people either if they're made of hydrogenated fats... If they solidify at that sort of temperature there's a good chance they are...

I think Will's referring to the 'wrong' plugs I have in my V6. Will may well think they'd be ideal for your gas-sniffers
