After much deliberation, I've narrowed it down a bit.
I'd love the 1983 ROLLS ROYCE SILVER SPIRIT just for its brown leather interior. They don't make 'em like that any more

But I'll pass on that as it's just a tiny bit impractical.
The 1968 RILEY KESTREL MKII looks a fine little car, but I'm not sure I'd get much use out of it, so no.
Tempted with the 1971 BEDFORD HA ICE CREAM VAN.... but perhaps not
There's a brace of XK8 Jaaaaags, one convertible, one not, but I think there might be better ones out there and these aren't standout ones, so no to them as well.
The 1990 CITROEN BX GTI 16V has already been earmarked by John, so I'll have to pass on that.
The 1972 ROVER P6 2000 SC appeals - much brown-ness with a cream <ahem> 'patinated' leather interior. Tempting, but no.
The brace of Austin / Morris 1800 look good, though I'm not sure why
The 1969 TVR VIXEN is extremely tempting. It really is. Not sure why two rebuilds on it have stalled though, so I'm a little wary of it.
It's a tough choice, but I'll have to settle for the 1992 MERCEDES 600 SEL AUTO. V12 luxury with a bit of history to it and mechanicals and electricals I can deal with. Sold !
