Sometimes it's not obvious what you should check first, and sometimes it's easy to doubt things you test and find are a symptom rather than the fault.
I'd try an expansion cap next, leave the thermostat be for now.
Radiator fan on at 87°C sounds a bit low if anything, would have said 95 - 100° C ?? Will see if I have the book figure - for 306, don't have any Xsara specific to hand.

Haynes 306 manual says for TU petrol engines, thermostat opening 89°C, fully open 99°C
Can't see any data on radiator fan thermal switch but would be surprised if was lower set point than the thermostat (as fan likely to run most of the time, surely?)
