I don't suppose you or anyone else has come across an interior trim removal guide have you? Google throws up nothing of use other than door trim removal.

Ok, so you won't get any errors if the parking assistance ECU itself has been disabled in the BSI. But as we know the rear sensors are working fine, that won't be the case. However, it is still possible that the Parking Assistance has been configured for rear parking assistance only, in which case the ECU won't be looking for the front ones which may be why there are no errors. If this was done as a result of the bodged wiring I can see why....
So don't be too daunted by the diagrams.

7519-7524 are the front sensor wires
When you get a chance, where you had that mash of cut wires, have a look on the sleeves so see what the codes printed on them are. They should have typically 4 numbers or 4 numbers and a letter. If you can find any of these with the wire colour, I might be able to ascertain what these are for. But the code is more important than the colour as they often use any colour going!
So don't be too daunted by the diagrams.

Which part of the trim? Can you pop a photo up of the relevant bit of trim?

I want to take the rear right and left trim out so I can check the wiring as I have a few loose wires that I need to chase back

Here you go. You'll need the usual set of trim removal tools:
Rear Wing Trim Removal
Rear Wing Trim Removal
| Remove the rear parcel shelf. Detach and remove the cover 18) using trim tools. | Remove:
|
| Detach and release the lamp (21) using trim tools. Disconnect and remove the lamp (21). | Remove the bolts (22). Detach the rear wing trim (9) using trim tools. Remove the rear wing trim (9). |
