With spares being so darn expensive over here, I will be getting the gasket kit and head bolts from a well-known auction site. The head kits all seem to come with the thick gasket (1.7mm). Will it cause problems fitting a head gasket thicker than it may need?

Should not cause any issues with thickness. Too thin can cause a problem, remember the pistons do slightly protrude out unlike a petrol unit.
To be honest I've always just fitted the thickest one and never had any complaints...
