The relays are OK because otherwise the fans wouldn’t run together at both speeds.
Does it flash red and stop when cold or either at low or high speed ?
Red and stop are normal at high speed.

Does it even flash at start-up when the engine is cold ?
If so, it's a display or indication fault, and disconnecting the battery may sort it.
After starting from cold, does the top radiator hose suddenly warm up after about five minutes ?
If it does, the thermostat is opening and coolant circulation is normal, except possibly for air locks and low coolant level.
The fans coming on slow, then fast when idling is normal for a warm engine.

Two wires are obviously for temperature sensing but not sure what the third wire does.
If it’s meant to earth when too hot, the sensor may be faulty and cause the ECU to flash.
We can’t go further with the three wires until someone arrives with a map.
