Clutch cable snapped.

Ok. How does the plastic plunger assembly come out of the pedal then?

Black plunger assembly is just prised out, towards front of car, after lifting pedal as far as it will go.

I found this out from a search about clutch cables/clips, and having to do the same cable clip job as you, Dave. Never having removed it before, I approached it very gingerly, prising it out using a screwdriver - after it's moved a couple of mm, it becomes free :)

Sometimes those plungers can be ferociously tight and will try to resist any effort to shift them until you find their sweet-spot and then they just pop out :twisted:
