the reason they dont usualy come out in one peice is because they are mounted in cast iron,this corodes and embeds its self into the plastic of the sensor

Removing Xantia ABS Sensors (with out breaking them)

The sensor I removed from my front left was mostly plastic with a casing of thin (~0.5mm) stainless steel. The ones at the rear are similar.
They are mounted through cast iron which corrodes and secures the sensor in place. This is usually worst at the rear where you often need to drill/grind part of this mounting away to remove the sensor in one piece as shown here:
