HI All - I'm renewing my gearbox oil. The Haynes manual states refilling on a level surface but I'm working on a slope with a bit of a camber. I am planning to use a spirit level and jacks to level the car first. Will the displaced drive-shafts cause a problem with the oil volume?

No, the plunging joint on any of the PSA drivetrains I've ever seen, has been external to the transmission, so the shafts can hang without affecting the oil level.
Getting it level, with enough room underneath to work, is the key to success.
Most garages will use a 2 post lift for this, so the suspension will be hanging.

I drained 2lt ( which I put in a couple of years ago) and filled with 2lt fresh oil. 2lt is the volume stated in the Haynes manual - it that accurate enough or should I also do the level check?
