Hi
I would try changing the Brown temp sensor first.
Make sure the engine is COLD & the sensor just unscrews from the engine.
Screw the new one in & plug the brown plug back on.
Make sure you have some more antifreeze & water to put back in because a small amount will leak out.

OK, from what you have done so far it appears either to be a fault with the temp sensor or with the wiring to the Bitron unit. When you unplug the sensor, the bitron is detecting an open circuit and putting the fans on full, but you are not getting full speed with it plugged it. This suggest the Bitron is reading an artificially high resistance. This will either be caused by the sensor itself, or wiring problems. Check the resistance of the sensor engine cold and hot - I don't know the figures exactly, but something like 5k ohms cold and 0.5k ohms hot will not be far off. If the readings are in this region then you have a wiring problem, and will need to trace back the wiring from the sensor (having first cleaned the contacts at the sensor) looking for other multiplugs that might need cleaning. It will probably drive you insane looking for it.....
