Are you sure you actually have a problem?? is the gauge is working properly? 80 degrees is not hot at all- its only just warming up and at that temp the stat is not usually open- the fans should not even be thinking about coming on!!!
Temp should normally go up when caning down the motorway, probably to at least 95 deg, and drop when you stop, only picking up again if queuing for a long time. Even in the bleak mid-winter you should be running above 80 degrees.

temp seems to go up when going faster but drop your speed down and the temp drops leave car ticking over and it goes to just over 80 and fans kick in, but running wrong way wired up wrong but dont think this is causeing the temp problem

At 80 degrees that's not excessive although without the thermostat it possibly could be a bit cooler but this statement has me a bit confused. "....fans kick in, but running wrong way wired up wrong ..." because if the fans are wired up to run in reverse, you have the equivalent of a blanket over your radiator and that is why the temp is increasing at speed if the fans do kick in. The fans MUST draw air across the radiator to duplicate the effect of air passing over it when the car is in motion at a bit of speed. I would suspect that you may require a good system flush out as it is possible that the coolant isn't circulating as it should which could explain why the temp is rising with the speed of the car.
Suggest you flush the system or have a radiator specialist do it for you and fix the direction of rotation of the fan which is really quite simple on a 12V DC system; there will be two wires going to the fan, simply reverse them and that will reverse the direction of the fan motor.
