coolant change

bled through the holes in turn, get hot air through the vents, all pipes are hot, when i remove the rad cap though water comes out, if i rev it the coolant level goes down, its did this a few times, the temp guage goes to the max - fans kick in and it goes back to its 1/2 mark, is the coolant over flowing the last of the air being removed? should i keep the cap on or off? am i doing this right or wrong lol
