ZX - Dreaded overheating?

My good ole 1.4i 94 ZX has a strange overheating problem. I say strange as there seems to be enough coolant in there and the warning light will only come on in specific circumstances.
If I go on a 1/2hr or so trip and then stop for 5 mins (eg for petrol or smokes), when I restart, the warning light comes on a couple of minutes into the journey. Both times I've managed to dive off the road, and after a couple of minutes carried on happy as larry.
The fan seems to kick in at the right times and there seems to be plenty of clean coolant in there (it was serviced a month ago at a Cit specialist in Wimbledon). I'm guessing its either an airlock,a dicky thermostat or a dodgy sensor (from what I have read) or failing that something far more sinister.
I'm going to spend some time having a look tomorrow - does anyone have any pointers at all?

A problem I had before in an old Visa was the radiator was past its time. Water was flowing through it fine, i even took it out and flushed it through both ways but the thing still overheated and eventually took the head gasket with it.
Then one day I noticed how only the top 1/3 of the radiator was hot, the bottom 2/3 were stone cold as it was obviuosly so blocked up inside/rusted that the water wouldnt flow there. Replaced it and everything was great. You may want to check this on yours but BE CAREFUL as it will be VERY HOT and so will the exhaust manifold which I think is at the front on the 1.4
